Breakfast Tacos
These are an absolute favourite in our house, my husband requests these at least once a week! The recipe below includes our favourite combination of ingredients, but you could add anything you like. Our most recent time having these, we used leftover Christmas ham, and it was SO good.
INGREDIENTS
6 tortillas
3 eggs
3 slices bacon
3 hashbrowns
½ cup grated cheese
½ avocado, sliced
hot sauce, if desired
METHOD
Preheat oven to 200 C.
Place bacon and hash browns on a baking tray, bake in the oven for around 15 minutes or until golden. Cut each piece of bacon and each hash brown in half.
Meanwhile, whisk together 3 eggs with a dash of water and a pinch of salt. Cook in a pan over the lowest heat, using a spatula to scramble as the eggs cook.
Spread tortillas on a plate, dampen a piece of paper towel and place on top, then microwave for 30 seconds.
To assemble, add a layer of cheese onto the bottom of each tortilla, followed by a piece of hash brown and a piece of bacon, divide the eggs evenly amongst each tortilla, and top with slices of avocado. If you like, add some hot sauce to top it off.
